Allergywise™ Bread is best eaten regenerated or toasted. The breads will return to just like being ‘freshly’ baked.
To regenerate the bread either:
*Toast at our preferred toaster setting
* Microwave it for 10 seconds or
* Heat the oven for at 180C for approx 5 to 10 minutes, or until warmed.

Mixes
When using Allergeywise™ baking products for the first time, use the recipes specified on the packaging for the products you are using. After you get a feel for how these mixes work, you'll be able to experiment further with adding different flavours to make these mixes unique to you.
Pastry Kitchen Allergen Wise baking mixes just like gluten free baking requires more liquids than wheat flours to produce good baking results. If you choose to convert a traditional recipe to an allergen wise or gluten-free recipe you will need to add more liquid than the recipe calls for hence Pastry Kitchen’s product range will enable you to produce perfect baked good every time.

Below are some helpful tips which will make baking Allergywise a pleasure.
Do not overfill your muffin tins. Only fill three-quarters of the way full. If a baked good reaches the top of a pan during cooking and still needs to rise more. The mixture needs something to grip on to the sides in order to keep going up in the middle otherwise it may collapse in the centre.
Try not to over-mix your batters - stir until ingredients are incorporated and then gently fold in any garnish such as dried fruits, herbs etc or any other ad-ins. Allergywise products just as gluten free baked goods do not rise as much as it is, so over-mixing can deflate your batter and ruin your rise.
Baking time is also crucial so it is important that the baking times are adhered to. Below are some examples to assist with baking your muffins or cakes so that you can achieve the bake needed.
The muffin or cake batter should be nice and smooth, just rolling off the spoon or whisk, not too dry or too wet. Rest the mixture in the pans for around 10 minutes, then place in the oven and set a timer to the lower indicated time.

Check with a skewer or knife to see if it comes out clean. If not, it will require to be baked more. Once baked, remove from oven and leave to cool before removing onto a cooling rack.

If under baked or over baked, the oven temperature and/or bake time may have been incorrect so it is important to adhere to the recipes to eliminate dry items from over baking or soggy doughy from under baking.
